The Game Pass Ultimate trial is not a separate benefit. It exists because the subscription includes EA Play, so the trial entry point you see on Xbox is the EA Play trial.
How the trial differs from the full game
The trial is limited by hours, not by content. Once the 10 hours are gone, access ends regardless of how many modes you played.
You can still open Ultimate Team, Career Mode and The Grounds inside the trial, as long as your platform supports The Grounds.
After the trial ends you either buy an edition or subscribe to EA Play Pro.

PC: use the EA Play section of the EA app.
The timer starts when you first launch the trial, not when the download finishes.
